Paleo Chocolate Chip Cookies

 3 cups almond flour, glanced
 1 tsp baking soda
 1 tsp salt
 2 eggs
 1 tsp vanilla extract
  cup pure maple syrup
 ½ cup coconut oil
 1 cup 60% dark chocolate chips

In a medium mixing bowl, combine the almond flour, baking soda and salt.

In a separate small mixing bowl, beat the eggs, vanilla and maple syrup. You can use a hand mixer or a whisk.

Pour wet ingredients into dry ingredients and beat with a hand mixer (or mix with spoon) until completely combined.

Melt coconut oil in microwave (heat for 5-8 seconds) and mix into batter.

Stir in chocolate chips. Add more to your liking!

Cover bowl with plastic wrap and store in fridge for at least 1 hour.

Preheat oven to 375° and line cookie sheet with tablespoon-sized scoops of the dough. Bake for 12 minutes, let cool and enjoy!
