PALEO chocolate chip cookies? Heaven, if you ask me.
I’m Lauren and I’m addicted to chocolate. Well, not as much as my younger self once was… but I am guilty of needing a daily dose of chocolate to keep me sane. So, if I were to pick one of the most difficult things about staying paleo-ish, it would absolutely be the huge lack of sweet, sugary, milky chocolate.
So, in my most pitiful state during my very first attempt at the Whole 30, I scoured through cookbooks and online recipes for a tasty cookie recipe that would feed my craving without completely blowing my commitment. I tried a handful of recipes and my own killer cookie recipe was born out of the inspiration of many.
These cookies are the perfect treat, whether you are paleo or not. The almond flour adds a nice nutty flavor and fluffy texture to the cookie and the 60% dark chocolate chips are not too bitter nor too sweet. Perfect balance.
One downside to this recipe… the cookie dough tastes terrible. My guilty pleasure is raw cookie dough, so I guess it’s a good thing that this recipe doesn’t have me eating the entire bowl before turning the oven on.
One batch makes about 25 cookies or so, which makes this a perfect recipe for the whole family. And if you prefer to make smaller batches for less people, you can save the dough in the fridge for a few days. Personally, I love fresh baked cookies, so I opt to make small batches of 8-10.
